Crafted with the new PaediaSure Shake Cookies & Cream flavour powder, these muffins offer a uniquely airy texture and a delicious taste twist that comes with an extra helping of nutrition. Perfect for a family bake-off or a quick after-school treat, they’re a playful way to add a bit more wholesome goodness to your little one’s day.
Method:
1. Preheat your oven to 200°C/180°C fan/gas mark 6. Line two muffin trays with paper cases—get the kids to help with this part!
2. In a large mixing bowl, lightly whisk 2 medium eggs using a handheld electric mixer for about a minute.
3. Add 125ml vegetable oil and 250ml semi-skimmed milk to the eggs, mixing until combined. Then, sprinkle in 5 scoops of PaediaSure Shake Cookies and Cream flavour powder along with 250g golden caster sugar. Whisk everything together until the batter is smooth and creamy.
4. Sift 400g self-raising flour and 1 tsp salt into the bowl (if you don’t have self-raising flour, use 400g plain flour and 3 tsp baking powder). Mix until just combined—don’t overdo it, or your muffins might turn out chewy instead of fluffy!
6. Spoon the mixture into the paper cases, filling them about two-thirds full. Pop the trays in the oven and bake for 20–25 minutes, until they’re golden, risen, and firm. To check if they’re ready, poke a skewer in the centre—if it comes out clean, they’re done! If you're using two shelves, swap the trays around after 15 minutes for even baking.
7. Once baked, let the muffins cool in the trays for a few minutes before transferring them to a wire rack to cool completely.
