Broccoli Risotto Recipe with PaediaSure Shake
Nothing says hearty like a big bowl of risotto and this one is enriched with PaediaSure Shake–so it’s an absolute winner for little tummies!
Method:
- Preheat oven to 180 °C.
- Melt the margarine in a large skillet over medium heat.
- Add onion, celery and broccoli to the skillet and sauté for 5 minutes.
- Add PaediaSure Shake, milk, mozzarella, and pepper to the skillet and mix thoroughly until hot (do not boil).
- Add rice to the skillet and mix thoroughly.
- Coat a 20 cm square casserole dish with cooking spray.
- Pour the mixture into the casserole dish.
- Cover and bake in the oven for 45 minutes.
- Uncover and cook for a further 15 minutes or until the rice is fully cooked and the mixture is hot and bubbly.
- Sprinkle with parmesan cheese and serve immediately.

2 bottles of PaediaSureShake ready-to-drink, vanilla flavour
128g of uncooked long grain rice
1 tbsp of margarine
1 small onion, chopped
1 stalk of celery, chopped
300g broccoli
70 ml whole milk
1 tsp black pepper
50g parmesan cheese, grated
70g mozzarella cheese, finely sliced
