Chocolate Cupcakes
Ingredients:
30g plain flour
1/2 tsp baking powder
40g room temperature butter
40g granulated sugar
1 large egg
4 scoops Chocolate PaediaSure Shake Powder
1 tsp cocoa powder
For the icing:
2 scoops Chocolate PaediaSure Shake Powder
1 tbsp whole milk
60g icing sugar
How to make:
1. Heat oven to 180°C and line a mini muffin tray with paper cases.
2. Cream butter and sugar together in a mixing bowl until light and fluffy. In a separate bowl beat the egg, then add it to the mixing bowl. Mix through, then add the flour. When just mixed (do not over mix), add the PaediaSure Shake powder and cocoa powder and fold through.
3. Fill paper cases 2/3 fill - there should be enough mixture for 12 mini muffins.
4. Bake in the centre of the oven for 15 mins - check they're cooked through by poking a cake tester (or skewer) in and ensuring it comes out clean.
5. Leave to cool on a cooling rack while you make the icing!
6. For the icing, mix the PaediaSure Shake powder together with the milk, gradually add the icing sugar until it all comes together. You can add a little more icing sugar for a firmer consistency.
7. Spread over the cakes and add your favourite sprinkles for extra fun!
