Roasted Tomato & Red Pepper Soup

Excite your fussy eater's taste buds with our homemade tomato & red pepper soup – a simple yet satisfying option perfect for any occasion! Bursting with the vibrant goodness of ripe tomatoes and the sweetness of red peppers (packed with vitamin C!), this soup tantalises taste buds while offering nutritional benefits.

Method

Preheat your fan oven to 200°C.

Quarter the tomatoes and roughly chop the peppers into inch-sized pieces, then place them on a baking tray. 

Crush the garlic, leaving it intact, and add it to the tray.

Drizzle olive oil, sprinkle oregano, and mix everything well. Roast in the oven.

While roasting, wash and cut the potatoes into small chunks (skins can stay on).

After 20 minutes, transfer roasted veggies to a saucepan, add chopped potatoes, and pour in hot vegetable stock. Bring to a boil, then simmer on high for 15 minutes.

Once cooked, add the PaediaSure Shake powder and blend until smooth.

360g tomatoes

2 red peppers

2 garlic cloves

3 level scoops of PaediaSure Shake powder vanilla flavour

 2 tbsp olive oil

1 tsp dried oregano

250g potatoes

1 litre hot vegetable stock

salt and pepper to taste
